Cooking time: 15 minutes


  • 1 sweet potato, thinly sliced
  • 1 eggplant, thinly sliced
  • 1 cup baby spinach
  • 1 tbsp olive oil
  • 4 slices Alt Dairy Co. cheese – we suggest a mix of Mozzarella and Cheddar
  • 4 slices of your favourite bread


  1. Heat olive oil on a large frypan on medium.
  2. Cook eggplant and sweet potato for approx. 6 minutes, turning once. Set aside
  3. Layer a sandwich with cheese, sweet potato, eggplant, baby spinach and more cheese!
  4. Toast in a sandwich press until golden brown
