Meet Victor Vu - The Alternative Dairy Co.

The Alternative Dairy Co is nothing without the Barista’s who everyday steam, stretch and pour our milk to create the best coffee experience in a cup.
They are the Nerds, Cat Lovers and Coffee Lovers behind the machine

Victor Vu

What’s your name, what do your friends call you?

My name is Victor, my friends often call me Vic or Victor Vu, and some people call me Victor Pan as in “Peter Pan”

What’s the best thing about being a barista?

Being a barista is actually changing my life. I have a chance to taste different coffee from regions all over the world, expand my relationships, and my career into the future. The most important thing for me is connecting people, customers with customers, customers with farmers, and sharing stories behind a cup of coffee.

If you could change one thing for the better about the coffee/café industry what would it be?

If I could change anything for the better about coffee, I would change myself. Firstly, because if I get better, people around me will get better and everyone could get better too. The main purpose is #nextcupbetter. My goal is bringing people an excellent cup of coffee, which not only tastes good, but also looks good and has meaningful stories behind it.

What’s your favourite dairy free milk type?

Actually oat milk is one of my favourite dairy free milks.

What’s your best tip/trick when making coffee on dairy free milk?

In my opinion, dairy free and dairy milk work pretty similar. The only thing is dairy free has a weak structure and is easy to split out. That’s why to have a shiny and creamy dairy free milk, we have to carefully texture the milk foam.

How important is it to buy locally, buy Australian? Why?

It’s really important to buy and support local businesses. Especially in this pandemic, because without you guys they can not survive and make the whole country grow.

How do you think ADC performs?

For the first time working with and drinking, ADC now becomes one of my most favourite dairy free milks. Super delicious, easy to steam and also do latte art.

What was your experience through COVID? Challenges? Silver linings?

I felt much luckier to others cause I still had a job during COVID. It was tough, it challenged not only me but also every one else in the world. But, after all we survived and we are stronger together. I think COVID brought people close together, we found the way to get over this pandemic and make the industry better.

What do you aspire to do/be in the future both professionally or personally?

My goal in the future is to complete myself, improve my knowledge and skills to be able to compete on the World stage of Latte Art or I might challenge myself to compete in Barista Championships.

What’s one thing that people may not know about you?

I am a person that is really friendly and open. Come and say hi to me. I would love to share with you my coffee world. Xx
