Christchurch's café culture has undergone a remarkable transformation over the past decade, shaped by resilience, community and a new generation of hospitality businesses. At the heart of that story is Authenticity Coffee Company. We sat down with Bink Bowler to talk about rebuilding café culture, creating a business built for café owners, and the role great cafés play in bringing people together.

Rebuilding café culture, one cup at a time

Some people find their calling later in life. For Bink Bowler, it happened when he was fifteen years old. Growing up in Wanaka, he remembers driving past a local café on the way to school and realising he would rather be there than in the classroom. More than two decades later, cafés are still where he's happiest. Today, Bink Bowler is the Managing Director of Authenticity Coffee Company, a Christchurch-based roastery and café built on a simple idea: doing things honestly, supporting café owners and creating great experiences around the table.

"I love cafés. I like the routine of them, but within the routine it's always different. You know what you're getting every day, but it's all different. It's always exciting."

Spend a few minutes talking with Bink and it becomes clear that cafés are about much more than what's in the cup. They're gathering places. Community hubs. Spaces where people connect. And nowhere is that more evident than Christchurch.

A city rebuilt through community

When the Christchurch earthquakes changed the city forever, they also reshaped its café culture. At the time, Bink Bowler was living in Wellington, where he owned and operated cafés. As residents left Christchurch and settled elsewhere, he witnessed first-hand just how much people missed the familiar rituals and places they'd lost.

"People had lost their city, and then they felt like they'd lost their café culture too."

The experience stayed with him. A few years later, he saw an opportunity to be part of Christchurch's next chapter and moved south.What followed was a period of rapid change. Entire precincts were rebuilt, new businesses emerged and a fresh café culture began to take shape. According to Bink, Christchurch didn't slowly evolve like many other cities. Instead, it leapt forward.

"It's gone from nothing to everything. It's skipped a decade of evolution."

Today, Christchurch's café scene is thriving. A mix of students, professionals, hospitality operators and local regulars have helped create a city with a strong sense of place and a flourishing café community.

Built by café owners, for café owners

After years spent running cafés, Bink began noticing a growing disconnect between roasters and the people buying their beans. At the same time, many café owners were facing increasing pressure. Rising costs, changing customer habits and the after-effects of Covid were creating challenges across the industry. Rather than watching from the sidelines, he saw an opportunity to build something different. That idea became Authenticity Coffee Company.

"We wanted to create a coffee roastery owned by café owners."

The business opened its flagship Christchurch site just a few months ago, combining a working roastery with a bustling café. The space reflects everything the brand stands for. It's approachable, welcoming and grounded in the realities of café life. No unnecessary complexity. No fluff. Just a genuine focus on supplying cafés with great products and strong support.

Why authenticity matters

The name wasn't chosen by accident. While brainstorming ideas, the team considered several options before settling on Authenticity. For Bink, it perfectly reflected the type of business they wanted to build.

"We want to be authentic as a company. Our pricing is authentic. Our whole offering is authentic. It is what it is."

It's a mindset that influences everything from the way they work with customers to the products they choose to stock in their café. That thinking extends to their partnership with The Alternative Dairy Co. When selecting plant-based options for the menu, performance was key.

"It pours really well. That's really important to us. Looking good in the cup is so important."

For a busy café environment, those details matter. From stretching and texturing performance to colour-coded packaging that helps teams work quickly behind the bar, every small improvement contributes to a better service experience.

Looking ahead

While the café itself has become a popular destination, the bigger vision extends far beyond the four walls of the Christchurch site. Authenticity's focus is on supporting more cafés, supplying more businesses and becoming part of everyday routines both in cafés and at home. But for all the growth ambitions, the heart of the business remains surprisingly simple.

Community. Connection.

And creating places people genuinely want to spend time in. Because whether it's Christchurch, Wellington or anywhere in between, the best cafés have always been about more than a great pour. They're about the people who walk through the door. And the people who make them feel welcome when they do.
