The Local Pour - Edizi Cafe, Christchurch

In the heart of Christchurch, Edizi is serving up more than a good brew. It’s a place built around thoughtful hospitality, creative drinks and the kind of everyday connection that keeps people coming back.
We caught up with Flo, one of Edizi’s baristas and duty managers, to chat about life in Christchurch, the craft behind the bar and why a great café experience is ultimately about how you make people feel.

A little bit of Europe in Christchurch
Originally from Toulouse in the south of France, Flo has found plenty to appreciate about his home in Christchurch. It might be one of New Zealand’s larger cities, but to him, it still feels approachable and easy to explore.
“I like the lifestyle. It’s a big city, but sometimes it doesn’t feel that big. You can do everything by walking.”
With its parks, green spaces and river, the city offers room to slow down. There is also a lively hospitality scene, with people heading out after work to share drinks, food and good conversation. It’s a rhythm that reminds Flo a little of Europe and gives Christchurch its own welcoming character.
More than what’s in the cup
For Flo, working in hospitality brings together two things he values deeply: people and craft.
There’s the hands-on satisfaction of making something with care, but just as important is creating a space where people feel comfortable. The menu might bring someone through the door, but it’s the full experience that encourages them to return.
“We sell drinks and food, but ultimately, we sell a place where people feel good and want to come back.”
That return visit is the real measure of a job well done. It means people enjoyed what they ordered, appreciated the service and felt a genuine connection with the crew behind the bar.
It’s a simple idea that says plenty about Edizi. Hospitality isn’t treated as a transaction. It’s a relationship built one conversation, one familiar order and one cup at a time.

Performance behind the pour
When it comes to plant-based milk, Flo reaches for oat as his personal pick. Behind the bar, oat and coconut both stand out for their texture and reliable performance.
“The texture is good, they hold well in the cup and they look great,” he says.
Coconut can be particularly tricky to get right, which makes consistency all the more important during a busy service. For Flo, The Alternative Coconut Milk delivers the texture he’s looking for time after time.
“It’s just spot on all the time. It’s great.”
That reliability is a big part of why Edizi chooses The Alternative Dairy Co. It’s not only about what happens in the jug or the cup, but also about working with people who understand the pace and standards of café life.
“We know what we’re getting. The product is good, it’s easy to work with and it’s about the relationship.”
Quality, consistency and a good working relationship might sound straightforward, but behind a busy bar, those details matter. They allow the crew to focus on the person in front of them and deliver a smooth, creamy pour without second-guessing the result.

From city planning to café life
Hospitality wasn’t always the expected path for Flo. He holds a degree in urban planning and, in another life, might have been helping cities rethink how people move around them.
“But life is life,” he says. “Now I’m in hospitality, which I quite enjoy. It’s just different.”
Perhaps the two worlds aren’t so far apart. Both are about creating spaces that work well for people. One operates at the scale of streets and transport networks, while the other can be as simple as a welcoming table, a familiar face and a beautifully made drink.
At Edizi, that feeling sits at the heart of the experience. Craft brings each drink together, but people are what make the place worth returning to.
“If people come back, that’s the best way to say we’re doing a good job.”
Pull up a seat at Edizi next time you’re in Christchurch, try something from the menu and stay for the welcoming local atmosphere.
