If you’ve spent any time on the Central Coast, you’ve probably heard of someone being called a legend.
It’s part greeting, part thank you, part nod of respect. For Pete, Founder and Owner of Legend Coffee and Culture in West Gosford and Terrigal, that word became something bigger. It became the philosophy behind his café.
“My name's Pete. I am the founder of Legend Coffee and Culture where I roast, barista and clean and do all the things you got to do. That's me.”

From Roastery Floor to Central Coast Fixture
Pete has been in the industry since 2007. What started with a girlfriend who worked as a patisserie baker turned into a career that stuck.
“She was a patisserie baker into all that stuff. I thought, you know what, I like coffee, I'm going to get into coffee. Got my first job at a roastery and sort of haven't looked back. The girlfriend became my wife. So that's a successful story in itself. And coffee has led to this, which is also a successful story.”
Nearly two decades in, Pete has watched trends rise, disappear, and return again. Automation, equipment upgrades, drink fads, deli sandwiches.
“The big one at the moment is the deli sandwich. It disappeared for seven years. And then now it's like the best places to go are the places who've released the new deli sandwiches.”
What stays constant for him is quality. Just steady refinement and better produce each year.
Why West Gosford, Why Terrigal
Legend’s first home was West Gosford, or “West Gossy” as the locals call it, chosen deliberately.
“We chose West Gosford for the space because it was just missing what we're doing.”
For Pete, the Central Coast was always home away from home. Close enough to Sydney to stay connected, far enough to breathe.
“You're sort of away on holiday but you're also in a bit of the hustle.”
As the writer of this piece, I can vouch for that shift firsthand. At the time, I was working just streets away. When word spread and Pete made a personal office pop-in to tell us that he’s opening a specialty roaster nearby. The excitement around the office was real. A roastery, on our doorstep. This was new for West Gosford like Pete mentioned. It didn’t take long before it became a regular ritual. Safe to say, it was an instant hit.
Seven years on, Legend has grown into two spaces. An industrial roastery café in West Gosford where you can see the back of house, and a more relaxed beachside spot in Terrigal.
What Makes a Legend
The name wasn’t a branding brainstorm. It was cultural observation.
“She is legend. We name the business because of pretty much that, I don't know if other countries do it, but in Australia, everyone's a legend.”
For Pete, that word stretches from farmer to importer to barista to customer.
“From the farmer being a legend with the work they do, everything along the whole supply chain… all the way down to the person drinking the coffee, they're all legends.”
It’s farm to cup thinking, without the cliché. A belief that every person in the chain matters. That philosophy shows up in how Legend sources, roasts, and serves.

Consistency Over Hype
Ask Pete what people can expect walking into Legend and he doesn’t reach for theatrics.
“I think they will find that they just get a consistently high-quality experience there's just consistency of excellence. That's what we look for.”
“Not everyone is our customer, but the people who do come love what we do.”
That clarity is part of why the café works. It knows who it is.
The Gossy Blend
The first blend Pete created when Legend opened was the Gossy Blend. Named for West Gosford, designed as an everyday entry into specialty.
“It was created as like a bit of a gateway.”
Chocolatey, nutty, medium roast.
“It was designed for almost anyone to be able to use.”
Built to pair beautifully with milk while still holding its own. Balanced, versatile. The kind of blend that supports baristas behind the machine and customers at home.
Choosing The Alternative
When it came time to revisit their plant-based milk offering, Pete didn’t make the decision lightly.
“We did the blind tasting. It came out equal or better, which is the key part.”
For any café searching for the best plant-based milk for latte performance, that’s the first filter. Taste and texture in the cup. Stretching and texturing behind the machine. No splitting, no curdling, no compromise on flavour balance.
Pete paid attention to how it poured.
“We tested how the milk actually worked and we poured great latte art. I reckon the oat is probably the most crisp I've seen latte art come out. The almond is excellent. I think almond is hopeless in general to pour latte art and I can get a good little stack of tulips.”
For baristas, that matters. Clean stretch. Defined texture. Consistent integration with the brew.
Then came ingredients.
“We discovered The Alternative had better ingredients than what we were using.”
And finally, locality.
“The Alternative is Australian owned, they're Australian run. They do everything here. They create jobs here…especially being coast based as well and having that relationship where we're both actually in the same region.”
Performance, clean ingredients, and local manufacturing. For Pete, it was straightforward.
“Being local, tasting great. Pretty easy.”

Creating Their Own Trends
Pete isn’t one to chase every industry wave. But he’s not afraid to create his own.
“We have a slushy machine" and “our customers love it.”
The cold brew oat maple slushy uses The Alternative’s oat milk and the Gossy Blend as its base.
“It kind of feels like a real all natural slushie. That's awesome coffee goodness. Love it.”
It’s playful, yes. But still grounded in quality ingredients and thoughtful execution. That balance of craft and curiosity is what keeps regulars coming back.
The Local Way
At its core, Legend is about people. Farmers, suppliers, baristas, customers. The same belief that shapes our approach at The Alternative Dairy Co.
We exist to craft plant-based milks specifically for café performance, collaborating with industry experts to deliver consistency with every pour.
In Pete’s words, everyone in the chain is a legend. We agree.
